Re: Baking

the pics should be up now @Former-Member

Re: Baking

I must make some more. The last thing I made was self saucing chocolate pudding from the CWA Housewives Cookbook that my grandmother gave me. Nothing modern it in, but heaps of tried and true recipes.

Re: Baking

Well done on the cakes @outlander.  I'd LOOOVE your recipe for brownies if you feel up to typing it on here.

I made the creamy mushroom sauce tonight and it was super yummy even if I do say so myself.  It's easy too.

1 tbsp butter, 1 pink shallot finely chopped, 450g mushrooms sliced, salt and pepper, 3/4 cup heavy cream, optional 1-2 tsp sherry

saute shallot 2 minutes, don't brown

add mushrooms, salt and pepper and cover with sealed lid

reduce to medium-low and steam slowly for about 10 min.

Add 1/2 cup chopped spinach or parsley if you want.

remove mushrooms with a slotted spoon and set aside

reduce liquid on high heat to about 3 tbsp (about 3 min)

add cream and boil til thickened a bit (2-3 min max)

put mushroom mix back in and adjust salt and pepper if needed (I like lots of pepper)

add sherry if using

____________

serve on toast or with pasta of your choice (spaghettie is good or fettucine)

Hope you enjoy this.
